The cool Fall temps have started rolling in and it’s the perfect time to start making some of my favorite comfort foods.
BUT, I don’t have a lot of time to spend in the kitchen. And I don’t want to feed my family fast food every day. So this means I need quick, easy, and healthy meal solutions that I can whip up pretty quickly.
That’s why I keep Progresso Rich & Hearty Chicken & Homestyle Noodle soup on hand — to help me make a real dinner, real fast, any day of the week.
I love Progresso because of their quality ingredients including antibiotic free, all white meat chicken. It’s also easy to find at my local Walmart. Another plus, saving time is always a great thing.
One of the kids’ favorite recipes is Chicken Pot Pie. I also love it because it tastes great and it’s very easy to make – using Progresso soup and ready-to-fill pie crusts. Progresso is rich and hearty – perfect for these cool nights.
We go from starving to completely full in about an hour. Which is great on the nights when I have to get my teen daughter to/from dance class and my younger son to/from football practice (yup, all in one night!).
I’m spending a lot of time in the car, taxiing children around, so when I get home the last thing I want to do is get crazy in the kitchen.
I need dinners that are quick, easy, and healthy.
Easy Chicken Pot Pie Recipe for Busy Moms
This recipe is pretty straight forward.
Two ready-to-fill deep dish pie crusts. 2 cans of Progresso Rich & Hearty Chicken & Homestyle Noodle soup. And a little flour (to thicken the broth).
Preheat oven to 425 degrees.
In a saucepan, combine the soup with flour. I usually eyeball it so I don’t have any exact measurements for you. Just throw some flour in, mix it up, repeat – until it gets to your desired thickness.
Cover and boil for about 15 minutes. Remove from heat and drain (most, not all of the liquid).
Place the soup mixture into one of the pie crusts. Fill to the top.
Put the second pie crust over the top, seal the edges, and cut away any excess crust.
Make several small slits in the top to allow steam to escape.
Bake in the preheated over for about 20 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
Pick up your favorite Progresso soups up at Walmart. Enjoy! 🙂
